  • Amuse-bouche with celeriac and pear bavarois, gin-soaked currants and thyme & confit garlic croute 
  • Asparagus - Charred asparagus spear with quail egg, pickled radish and goats milk puree
  • Cod – salted baked cod with lemon balm foam, dill poached cucumber and watercress mousse 
  • Venison – smoked venison loin with roasted baby beetroot, sautéed grelot onion, chestnut puree and port reduction 
  • Palette cleanser – lemon & thyme foam with burnt orange gel
  • Beef fillet – Ayrshire beef fillet with confit garlic pomme puree, wild mushrooms and bone marrow butter 
  • Salted Caramel – salted caramel ganache with honeycomb, raspberry powder and Hendrick’s crème fraîche
