  • Confit chicken terrine with leek ash, wild rice, prune and foie gras
  • Marmite cured salmon with crab cake, apple and pink grapefruit
  • Jerusalem artichoke risotto with white truffle, hazelnut and lemon

  • Petley Farm pork belly with roasted pineapple, chorizo cassoulet and cavolo nero
  • Roasted coley fillet with leeks, cockles, roasted garlic purée and dill pickles
  • Roasted cauliflower gratin with fried hen egg, couscous and cauliflower cheese purée
