• North Uist landed langoustines grilled with garlic and parsley butter, served with rocket salad
• Ardnamurchan Estate wild venison & chicken liver parfait with red onion & fig chutney, served with oatcakes and a pickled radish salad
• Hebridean blue cheese with pickled kohlrabi, beetroot jam, toasted walnuts and dressed leaves

• Roast smoked lamb rump with braised fennel, orange, olive & oregano jus and steamed samphire
• Seared sea trout fillet with pink grapefruit hollandaise, sweet potato purée and grilled asparagus
• Speyside 9oz sirloin steak with skinny fries, confit tomato, flat cap mushroom and peppercorn sauce
