  • Cauliflower panna cotta, dressed East Neuk crab, grapefruit purée, avruga caviar, avocado cream and cucumber jelly
  • Onion squash, jamon Iberico, soft goats curd, Baldinnie quail egg, marinated girolles, pomegranate and pumpkin seed oil

Mains 

  • North Sea cod cooked in cep butter with fine beans, shaved autumn truffle, baked celeriac, poached grapes, potato beignets, sea herbs and cep velouté
  • Tournedos of 12 hour braised daube of Scotch beef, Stornoway black pudding, beetroot fondant, puy lentils, red wine shallot and red wine jus

Dessert 

  • Hot apple mousse and oat crumble with tonka bean & vanilla ice cream
  • Dark chocolate ganache, hazelnut praline crèmeux, salted caramel, poached pears and pear sorbet
  • Selection of Scottish cheeses with chilli jam and honeycomb

  • Slow roast pork cheek, polenta mousse, sweet & sour turnip and fried sage with truffle and elderberry jus

Mains 

  • Wild halibut cooked in cep butter, shaved autumn truffle, fine beans, baked celeriac, sea herbs, poached grapes, potato beignets and cep velouté
  • Roast loin of Cairngorm red deer, beetroot & blackberry purée, puy lentils, tartlet of braised venison & haggis, beetroot fondant and spiced bay leaf jus

Dessert
