• Twice baked cheddar and neep souffle with Hebridean haggis and Spey whisky cream
• Smoked fish & pink prawn cocktail with lime gel and mango & pomegranate salad
• Slow cooked hoisin duck leg with miso potato waffle, butternut squash, sesame dressed kale and hoisin gravy

Mains

• Roast sirloin and pink rump of Orkney beef with goose fat roast potatoes, cauliflower mornay with garlic crumb, Yorkshire pudding, red wine sauce and all the trimmings
• Pan fried fillet of seabream with brown shrimp buerre noissete with capers & crispy croutons, toasted nori & lemon crushed jersey royals and a creamy lobster bisque
• Butternut squash arborio rice risotto with crushed feta, pumpkin seeds, pecorino crisps and crispy truffled tenderstem broccoli

Desserts

• Bread and butter pudding with spiced fruit, warm crème anglaise, salted caramel sauce and toffee popcorn ice cream
• Passionfruit brûlée with dark chocolate ice cream, honeycomb, fresh raspberries and toasted blackcurrant marshmallows
