- Cauliflower mousse with brioche crumb and curry oil
- Roasted butternut squash velouté with marinated cider apples
- Ham hock terrine with pickled vegetables, golden raisin purée and country bread
- Textures of heritage beetroot and apple with whipped goat’s cheese
- Slow braised Scottish beef brisket with spelt risotto, baby onions and thyme jus
- Gilthead sea bream with lightly curried lentils and coriander oil
- Locally grown leek, carrot & Roquefort cheese risotto with candied pecans and crispy leeks
