• Pink loin of Newtonmore venison with spiced red cabbage, parsnip and vanilla puree, comté cheese potato dauphinoise, crispy tenderstem broccoli and raspberry and juniper game sauce
• Ta'miya tempest with kataifi pastry, golden raisin couscous, smoked red pepper caramel, courgette and basil puree, za'atar oil, burrata, toasted seeds and nuts

Desserts

• Warm pecan and treacle tart with spiced pear puree, vanilla anglaise and brown butter ice cream
